They are great for fun red sprouts, micro-greens, baby leaves, regular leaves, & the edible seed heads. The leaves will hold their color when they are cooked, enabling you to add great color to many dishes. Red Aztec Spinach’s seed heads (similar to lamb's quarters or quinoa) can be eaten like the heads of broccoli – used in stir fries, battered & deep fried, or sautéed. A very useful & versatile vegetable!
